The land
The Gravina di Laterza is one of the deepest canyons in Europe: twelve kilometres of sheer walls rising as high as two hundred metres, wrapped in Mediterranean scrub. On the rim sits a village of lime-washed houses, its alleys still smelling of bread and wood smoke.
The town of the three Fs — Forni, Fornaci, Fornelli: bread ovens, ceramic kilns and roasting hearths. All three still going, centuries on.
